Breakfast: Home-made Granola

2 cups oats 100g mixed nuts pinch salt 1 tsp ground cinnamon 1 tbls flax seed 1 tsp vanilla extract 4 tbls organic honey 3 tbls coconut oil 1 tbls goji berry 1 tbls dried cranberry 1 tbls sultanas


Preheat oven to 180, combine all dry ingredients (except dried berries) in one bowl and set aside. In another bowl mix the honey, coconut oil and vanilla and then mix wet into dry mix(gloves will come in handy). Line your baking tray with baking parchment and place the mix evenly on it. Bake for 8-10 mins then take out and stir, bake for a further 10 mins until golden brown. Remove the mix and let cool completely before adding the dried berries, once cool put into an air tight container to ensure freshness.
